I learned my method from Just Bento and I must give credit. However, I don't have a rice cooker and I want my blog post to contain more than just a link so I'm going to show a step by step of how I do it.
2 cups calrose rice
2.25 cups water
Rinse the rice in a strainer inside a bowl. Stir the rice around with your hand, change the water twice.
Empty the bowl and let the rice rest in the strainer for 1 hour
Pour the rice into the cooking pot and add the water. Let this sit for one hour.
Turn the burner on high for 4 min. When the timer goes off, give it a quick stir. Then cover, reduce heat to low (2 on my stove) for 14 min. When that timer goes off, turn off the heat, set the timer for 5 min again, and leave it--still without removing the lid.
After that 5 minutes dings, cut it out using a fork or rice paddle, into your bowl.
Mix together: 3Tbsp rice vinegar, 1Tbsp sugar, 1tsp salt. Pour that mixture over the rice and then cut/fold the rice using your rice paddle. I don't have a rice paddle so I use a big flat-ish metal spoon I have. Works fine. You just don't want to use a wooden spoon! don't stir, you must cut & fold :-)
